Roasted or Charred Red Bell Peppers

To roast or char peppers, wash and cut them in half lengthwise. Remove the seeds and ribs. Place an oven rack on the top level and heat the broiler. Line a cookie sheet with aluminum foil and spray with nonstick spray. Place the peppers, skin side up, on the foil and place under the broiler until the peppers have blackened, 8 to 10 minutes. Remove the peppers from the oven, let cool slightly, and then place them in a plastic bag. Seal the bag and allow the peppers to cool completely. Peel away the charred skin from the peppers and discard. At this point, use the roasted peppers in a recipe or pack them in a small jar, cover with olive oil, and refrigerate.
